5.30 ha are located in Beaune itself on three lieu-dits : ‘la Grande Châtelaine’, ‘Les Pierres Blanches’ and ‘La Combe d´Ève’. Other plots have been added and the Domaine Emmanuel Giboulot spreads today over a total of 12ha of vines ; Rully 1er Cru ‘Les Pucelles’, Hautes-Côtes-de-Nuits, Mâcon Villages… and a new cuvée from the lower slopes named after the local IGP Saint-Marie-la-Blanche. In viticulture less is more. It means that the less we disturb the natural symbiose of the soils and their regeneration with micro-organisms, the less we interfere in the biodiversity chain and the more we tend to wines expressing the truth and the complexity of their terroirs. Purity / Minerality / Character are the key words of Emanuel Giboulot’s winemaking philosophy.
