Multiple grape varieties coming from organic parcels, controlled and certified by Qualité France, Bureau Veritas. Thirty-year-old vines growing on soils of clay, gravel and layers of schist. Some belong to the Domaine Mosse and many grapes come from their negoce with local winemakers; unfortunately in 2020 the weather conditions were disastrous and led to the loss of an important part of the Domaine Mosse harvest.
The different grape varieties are vinified separately in a short semi-carbonic maceration (between 4 and 10 days depending on the grape variety). Separate aging in barrels for 6 months. Blending a month and a half before bottling. Indigenous yeasts, unfiltered wine.
A raspberry colored robe and an expressive nose of blackberries, cardamom and fresh figs. Fresh, crunchy and spicy on the palate with a gentle spritz. Bisou is a light, fruity and easy-drinking wine to enjoy lightly chilled.
